Friday Stir Fry : Broccoli Mushroom & Shrimp with Oyster Sauce

Since my baby can crawl and stand , it is hard for me to cook something complicated. I need to watch him carefully. Unfortunately the split level design in my apartment doesn't allow me to cook while watching him. So quick and easy menus will be my choice these days.
Stir fry is one of quick and easy way to cook. I had more than 5 guests tonight, I prepared these two kind of stir fry.

BROCCOLI MUSHROOM

Ingredients :
3 crowns of broccoli
1/2 pound of sliced mushrooms
1/2 big onion julienned
1 tablespoon of mince garlic
3 tablespoon of canola oil
1 tbs oyster sauce
1 tbs fish sauce
1/2 tbs of rice cooking wine
1/2 teaspoon of black pepper
50 mL water
2 tsp of corn starch

1. Boil broccoli until the color is changed (do not overcook, so the broccoli will be still green). Strained the boiled broccoli.
2. Heat canola oil in a pan, saute onion and garlic until soft and we can smell the fragrance.
3. Add the mushroom, stir fry until color changed, and put all the seasoning, mix well.
4. Add 50 mL water that mixed with 2 tsp of corn starch.
4. Add broccoli into the pan, mix with all the ingredients quick. Serve while still hot.

Broccoli Mushroom Stir Fry

OYSTER SAUCE SHRIMP STIR FRY

2 pounds Shrimp
1/2 onion julienned
1 tbs mince garlic
5 tbs oyster sauce
3 tbs sweet soy sauce
2 tbs ketchup
2 tbs chilli sauce ( -- if you like spicy food ^-^)
Salt
Sugar
Pepper
Margarine

1. Melt margarine on the pan, add garlic and onion, sauté them.
2. Add all the sauce, if needed add water, make it boiled.
3. Add shrimps , stir fry it until the color changed (shrimp will be chewy if overcooked). Serve.

My Birthday 2010

Last Tuesday (6/15) was my birthday.
I was too lazy to cook something special on my birthday..my excuse is Monday before my birthday we went to Lebanon,NH & Vermont, and arrived at home at mid night. So tired but happy :-)
But I was so blessed...At 10.30 am, 3 people came to my house and bringing food and cake..
Actually they would have meeting with my husband, but apparently they remembered my bday.
The Pad Thai was so good, but I forgot to take the picture of it..
The cake is also good, not too sweet, pandan flavor and top with fresh fruits. Unfortunately, since I still have to breastfeed my baby who has allergic to eggs, I only brave enough to take one small slice..
Above all, I thank God for this year...
I've been 17 years old, for 17 years now ^_^

In the afternoon...a couple knocked at my door and brought this kind of 'spring roll'....yummmy...

My Freezer and Pantry Clearance

It's June already...
Finally we are in the middle of 2010...
I'm thinking to clear my freezer and pantry before fill them again.
Anyone would like to join me ? Let's use what we have for our lunch and dinner's menu.

Here are some of my planning...

Yellow Fried Chicken ( using 2 whole chicken and Munik Ayam Goreng instant seasoning)
Crab Rangoon (using cream cheese, canned crab meat, wonton skin)
Vietnamese Caramel Shrimp ( I still have 2 pounds of shrimp in my freezer)
Green beans stir fry
Kidney beans soup
Tapioca Pearl and green jelly dessert

Saturday Treats...

We ran out of bread this morning...
Before breakfast time, we went to groceries shop and grabbed one loaf of 100 %whole wheat bread. My eyes couldn't resist marshmallow on sale next to bread shelves...I remembered I still have one box of rice krispie cereal that will expired soon. I can make rice krispie treats this afternoon...
The direction for making it is already printed on the marshmallow package.
It was so easy and quick...

1 package of marshmallow (10 oz)
1/2 stick butter
1 box (16 oz) rice krispie cereal --- i did't use it all...I ended up using about 3/4 of box

Melt the butter in microwave bowl for 45 seconds using medium heat microwaves.
Toss all the marshmallow with the butter, heat about 1 1/2 minutes until they blend.
After about 45 seconds...put the cereal into the mixture, stir until well blended.
Place into 13x9 inc greased baking pan and press..
Let it cool...cut according your preference.

Thursday Projects...

I will use my mom's recipe for the brownies. I'll try Hershey dutch processed chocolate powder. Will it make the same result as my fave choco powder ( Van Houten Dutch processed chocolate powder)? Let's see..

White Choco Chips Rhum BROWNIES

Ingredients :
4 eggs
2 cups of sugar
1 cup of chocolate powder
1 cup of canola oil
2 cups of flour
2 table spoon of Jamaican Rhum
1/2 cup white choco chips

Direction :
Preheat the oven 350 F. Whisk eggs and sugar. Add chocolate powder, mix until well blend. Add canola oil and rhum, mix again until well blend. You can use wooden spoon to stir the batter. Lastly, add flour gradually, don't stir it too hard..just until all blend. Pour out the mixture to 13"x 9" baking pan. Bake 30 minutes.



Hershey Brownies Original without editing

....the result was different than if I use Van Houten..I love the smell of Van Houten Choco powder..As I noticed this Hershey's Cocoa is not 100 percents dutch cocoa, it says a a blend of natural and dutch cocoa. But anyway the moist of this brownie is better than when I used Hershey Cocoa without dutch cocoa.

Banana Chocolate Wonton


A week ago I stopped by to Steamy Kitchen Blog. I saw her recipe Chocolate Wonton.
I tried to make it, but I added banana as the filling.
It turned out good and delicious. I love it, because it is very easy to make. We can change the filling according to our preference, and it's also good with vanilla ice cream. Next time I'll try strawberry or raspberry..
Every body who joined church home group meeting today enjoyed it.. I'm glad they like it.
Banana Chocolate Wonton

Ingredients :
Wonton
Banana --- chopped
Mini Morsels Chocolate Chips
Canola Oil

Direction :
Put a layer of wonton, wet the edge of wonton. Put 1 tsb of chopped banana, and 1 tsp of chocolate chips. Stick the wet edge of the wonton, so the filling will be inside the triangle.
Heat cannola oil in a pan using medium heat, fry the wonton until golden brown.

Papaya Lemon

Today I went to Walmart near my house. I saw papaya at fruit section. I couldn't help my self not to buy it. I also grabbed some lemons. I really remember my childhood. These kind of fruits are often available on our dinning table after lunch. My dad loves to eat papaya sprinkled with lemon juice and sugar.
This afternoon, I prepared the same kind of dessert as I'm thinking of my dad who is in ICU Borromeus Hospital in Bandung. Bapak, I miss you so much...You are in my prayers.


It smells like my childhood...





Recipe :

1 riped papaya, cut into square shape
1 lemon, squeeze for extracting the liquid

Put papaya into a bowl, sprinkle with lemon juice, if you like you can sprinkle with small amount of sugar ( I skiped sugar this time).

Rendang ala Bumbu Bangka 47

Bagi perantau, sudah tidak asing lagi menggunakan bumbu instant dalam memasak.
Bulan lalu, ketika ada teman berkunjung saya menitip dibelikan bumbu instan. Bumbu instant ini salah satu produk industri tante dari salah seorang teman di Bandung yang berkiprah di daerah Malang dan sekitarnya. Bumbunya dijamin tanpa MSG dan tanpa pengawet.

Cita rasa rendangnya juga unik, sudah disesuaikan dengan lidah Jawa...agak manis kalau menurut suami saya yang lebih suka rendang Pandang asli.

Tapi buat saya, bumbu rendang ini enak banget *asli ga dibayar buat ngiklan* :-) ....cita rasanya mirip rendang bikinan mama.

Senangnya lagi, di dalam bumbu instant ini sudah disediakan koya (kelapa kering) untuk dibubuhkan setelah rendang masak, sesaat sebelum diangkat dari api.


Satu lagi bumbu yang saya suka dari merek ini adalah Bumbu Lodeh. Kapan-kapan saya posting hasil memasak lodeh dengan bumbu ini.
