NASI PEPES IKAN -- Steamed Rice & Sardines in Banana Leaves
I found out that I have some of the ingridients for making Nasi Pepes. My friend brought me lemon bassil, small red chilli last week. So I started browsing the recipe, and decided to useMba Ine's recipe from multiply http://elkaje.multiply.com/recipes/item/1/PEPES_NASI , instead of using chicken, salted fish and mushroom I used canned sardines (http://www.beachcliff.info/beachcliff/usaenglish/product_mainpage.asp) and also I added sliced shallot for the seasoning. As usual, there will be some adjustment according to what I have in hand :-).
My husband loved it....he finished 4 wraps for his lunch. The aroma of roasted banana leaves and the seasoning are just perfect.
Here is the recipe..
1/3 cup chopped green onion
2 cans Sardines in water -- drain the water50 grams Lemon Bassil leaves
1/4 tsp white ground pepper
1/2 tsp salt
1 tbs minced garlic
1/2 shallot -- sliced
1 tbs chopped lemon grass
1 tsp sliced galangal
2 tbs canola oil
5-6 dried Bay leaves
10 small red chilli
500 grams cooked rice
200 mL water
Banana leaves for wrapping
Toothpick for wrapping
Direction :
1. Saute shallot, garlic, lemon grass, galangal, bay leaves until we can smell the aroma
2. Add sardines and continue to stir fry them, add the salt and pepper, after that mix the rice and the seasoning.
3. Add water, green onion and lemon bassil, cook until the the water is absorbed.
4. Wrapped the seasoned rice with banana leaves, pin with toothpicks. Don't forget to put 1 red chilli for each wrap. For this recipe I can make 8 wraps.
5. Steam for 30 minutes.
6. If you like, you can toast it by using non stick pan to produce 'special aroma' from the leaves.
