Choco Chips Muffin for Snow Storm Day

Two days of snow storm. It hits all over US except Florida.
Jev has been begging me to play out site. He loves snow. I couldn't allow him to do it
because of his cough and flu..poor Jev :-(


Snowy Day


Staying at home...keeping all family stay warm.
This morning instead of having wheat bread breakfast, I prepared homemade choco chips muffin.
Love it...

I got easy recipe from cooks.com ...here is the LINK.

1 1/2 c. all-purpose flour
1/2 c. white sugar
3 tsp. baking powder
1/4 tsp. salt
1 c. chocolate chips -- I used mini choco chips
1 c. milk
1/3 c. melted butter
1 egg

Mix dry ingredients and add chocolate chips. Combine egg, milk and butter and stir into flour mixture. Do not beat. Bake 375 for 20 minutes.

Marmer Cake Choco Chips


Just another modification of instant cake mix :=)
Ingredients:
1 Box White Cake Mix Betty Crocker - French Vanilla

1 1/4 water *

1/3 cup canola oil *

4 eggs ( adding 1 more egg....just want to try to reduce sweet taste..but actually adding cholesterol to my cake he..he..)
3 tbs chocolate powder (using Dutch processed is recommended)

1/2 cup choco chips


*according to cake mix instruction


Directions:

1. Stir cake mix, eggs,water and oil. Beat with slow speed for 20 seconds, continue to beat using the mixer with medium speed for 2 minutes.
2. Separate 1 1/3 cup of the batter, mix with the powder chocolate.
3. Add choco chips to the white batter.
4. Pour out the batter to a greased bundt pan.
5. Bake 40 minutes 350 F ( don't forget to preheat the oven before)

4. Tuangkan adonan putih dan coklat bergantian.5. Panggang dalam oven suhu 350 F selama kurang lebih 40 menit.

Pandan Instant Cake




I still want have something for snacking.
So...instant cake mix is one of the choices for busy mom.
As I remember my mom's Pandan Cake (she always make it from scratch). I tried to modify yellow instant cake mix to be Pandan Cake by using Pandan Leaves Extract in a can (the amount of this extract is equal with the water that is suggested by cake mix instruction). The result is satisfying ... Pandan aroma and the fluffiness of the cake are just perfect :-)

Ingredients:

1 box instant cake mix (yellow cake)
1 1/4 cup Pandan leaves extract
1/3 cup canola oil
3 eggs
1/4 tsp Pandan Paste-- just for adjusting the tone of the green color


Directions:

1. Stir all the ingridients in a large bowl. Mix with slow speed mixer about 20 seconds, continue to mix using medium speed for about 2 minutes.
2. Pour out the batter into a greased bundt pan
3. Bake for 40 minutes, 350 F.
